Catalase : an enzyme with growing industrial potential

Abstract

|
Catalase (EC 1.11.1.6) is a tetrameric, heme-containing enzyme present in the cells of all aerobically living organisms, which catalyses very efficiently the decomposition of hydrogen peroxide into water and oxygen. Based on this simple overall reaction, a wide variety of industrial uses for catalase have developed in such sectors as food, dairy, textile, pulp & paper, contact lens care, and more generally in any process that requires, at some stage, rapid and quantitative removal of H2O2. Commercial catalases are mainly produced by extraction from bovine liver and, increasingly in recent years, by fermentation of microbial sources such as Aspergillus niger and Micrococcus luteus. It is expected that microbial catalase will gradually replace the existing chemical treatments as a cost-effective and environmentally friendly way of hydrogen peroxide elimination. |
